我的生日大餐

I am a thirty-year-old man…sigh! Today is my birthday. I decide to cook something for myself. Here are my birthday recipe: garlic mashed potatoes, macaroni salad, and steak with cranberry sauce.

孔子說:三十而立!天啊,轉眼間我也到了而立之年!今天生日,成家無望,就來自己搞點東西來慶祝一下吧:牛排佐蔓越莓醬,附菜是通心粉沙拉與蒜味馬鈴薯泥,左圖是九月底試做的成品。

牛排佐蔓越莓醬 Steak with cranberry sauce

材料 Ingredients:

  • 一塊牛肉 one beef cut of your choice.
  • 1/4顆洋蔥切末 1/4 onion, minced.
  • 兩湯匙蔓越莓醬 two table spoon cranberry sauce.
  • 一茶匙法式芥末醬 one tea spoon Dijon mustard.
  • 一茶匙烏斯特郡醬油 one tea spoon Worcestershire sauce.
  • 兩湯匙蔓越莓汁 two table spoon cranberry juice.

作法 Directions:

  • 先將牛肉下鍋煎,煎到各人喜好的熟度 cook steak until desired doneness.
  • 洋蔥末炒軟,依序加入蔓越莓醬、法式芥末醬、烏斯特郡醬油,最後加入兩湯匙蔓越莓汁,邊攪拌邊煮到滾即可 cook onion until tender. Then, add two table spoon cranberry sauce, one tea spoon Dijon mustard, one tea spoon Worcestershire sauce and two table spoon cranberry juice. Cook over high heat, bring to a boil, stirring constantly.
  • 擺盤,將牛肉淋上醬汁即可 arrange steak on a platter, and spoon some sauce on the steak.

蒜味馬鈴薯泥 garlic mashed potato

材料 Ingredients:

  • 一顆大小適中的馬鈴薯,去皮切成數片 one medium-size potato, peeled and cut into slices.
  • 蒜頭一顆切成細末 one garlic, minced.
  • 一湯匙奶油 one table spoon  butter.
  • 磨菇六朵切片 six mushrooms, sliced.
  • 牛奶適量 some milk.
  • 鹽適量 salt.
  • 現磨黑胡椒適量 freshly ground black pepper

作法 Directions:

  • 將馬鈴薯煮熟,可用大同電鍋,一杯半的水,煮到開關跳起來。Place
    potatoes and enough water to cover in large pot. Bring to a boil.
    Reduce heat to medium and cook for approximately 15 to 20 minutes or
    until potatoes are tender.
  • 趁熱將馬鈴薯壓成泥 mash potatoes.
  • 將蒜末用一湯匙奶油爆香 cook minced garlic with one table spoon butter.
  • 加入磨菇炒到熟 add sliced mushrooms and cook until tender.
  • 加入馬鈴薯泥與適量牛奶攪拌均勻,並炒到牛奶被薯泥吸收 add mashed potatoes and milk. Cook until potatoes absorb the milk.
  • 食用時,依個人喜好灑點鹽花或黑胡椒 sprinkle with salt or freshly ground black pepper if desired.

通心粉沙拉 macaroni salad

材料 Ingredients:

  • 1/4顆洋蔥切末 1/4 onion, minced.
  • 鹽一小匙 one tea spoon salt.
  • 義大利通心粉 200克 200g macaroni.
  • 牛奶兩大匙 two table spoon milk.
  • 冷凍火腿與三色蔬菜 200克 frozen ham and mixed vegetables.
  • 美乃滋一杯 one cup of mayonnaise.
  • 一茶匙法式芥末醬 one tea spoon Dijon mustard.
  • 黑胡椒少許 freshly ground black pepper.
  • 義大利香料少許 Italian seasoning.

作法 Directions:

  • 冷凍火腿與三色蔬菜煮熟放涼備用 boil frozen ham and mixed vegetables. Then, drain and cool.
  • 將通心粉煮熟,加入兩湯匙牛奶,並攪拌到涼 cook macaroni until tender, and drain. Then, add two table spoon milk into cooked macaroni, stirring constantly until cool.
  • 取空碗,將美乃滋、法式芥末醬、黑胡椒混合備用 mix together the mayonnaise, Dijon mustard and black pepper in a separate bowl.
  • 取一大碗,將通心粉與冷凍火腿蔬菜混合 mix cooled macaroni,  ham and mixed vegetables together in a large bowl.
  • 將調好的醬料倒進大碗,充分攪拌 stir dressing into the macaroni mixture.
  • 依照個人喜好加入適量義大利香料 add a little Italian seasoning. Taste and adjust seasonings.

補充說明:

  • 烏斯特郡醬油 Worcestershire sauce就是一般牛排館常見的A1牛排醬或是梅林辣醬油,一般超市都有賣,挑嘴一點的,可以到微風廣場的超市,或是101樓下的Jason’s market買,那邊有國外品牌的Worcestershire sauce。
  • 蔓越莓醬可以自己做,作法可以參照蘋果日報中秋節前,營養師謝宜芳示範的作法,或是買現成的,微風廣場的超市,或是101樓下的Jason’s market有在賣。
  • 蔓越莓汁請買原味的,不要買有加蘋果汁或其他果汁的。
  • 通心粉沙拉的冷凍蔬菜,可以換成新鮮蔬菜,或添加其他蔬菜,例如西洋芹,但要切成與冷凍蔬菜大小相當的丁,口感比較一致。另外,義大利香料也可以換成新鮮香草,例如時蘿,這類香草,家樂福或好事多就有賣了,不一定要到頂級超市購買。
  • 牛肉盡量不要選板腱肉,因為帶筋的肉,爸爸會咬不動,板腱肉雖然比較便宜,但適合拿來做滷牛肉,拿來做牛排,有筋會切不斷,沒煮熟就會像咬橡皮筋一樣。
